This role focuses on high-volume production (bulk cooking), ensuring the delivery of nutritious, flavorful, and authentic meals for a large workforce. The ideal candidate will have extensive experience in large-scale kitchen operations, maintaining strict hygiene standards while managing a designated section of the kitchen.&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Key Responsibilities&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;strong&gt;Bulk Food Production:&lt;/strong&gt; Prepare and oversee the production of authentic North Indian (Gravies, Tandoor, Sabzi) and South Indian (Idli/Dosa batters, Sambar, Rasam, Rice varieties) dishes for 400+ pax per shift.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Recipe Standardization:&lt;/strong&gt; Follow and maintain standardized recipes to ensure consistency in taste, quality, and portion control across large batches.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Section Management:&lt;/strong&gt; Lead a team of Commis chefs and kitchen helpers, ensuring all prep work (Mise-en-place) is completed ahead of service.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Quality Control:&lt;/strong&gt; Conduct regular tastings and visual checks to ensure all food meets company standards before it leaves the kitchen.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Hygiene &amp;amp; Safety:&lt;/strong&gt; Adhere strictly to HACCP, FSSAI, and industrial safety guidelines. Maintain a clean and organized workstation at all times.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Inventory Management:&lt;/strong&gt; Assist the Head Chef in monitoring stock levels, minimizing food wastage, and ensuring proper storage of raw materials.&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Technical Skills &amp;amp; Qualifications&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;&lt;strong&gt;Cuisine Expertise:&lt;/strong&gt; Proficient in tempering techniques, spice blending, and traditional cooking methods for both North and South Indian regional menus.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Equipment Knowledge:&lt;/strong&gt; Experience operating large-scale industrial equipment (e.g., steam kettles, tilting pans, commercial grinders, and high-pressure burners).&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Experience:&lt;/strong&gt; Minimum of 3-5 years of culinary experience, with at least 12 years in a similar capacity within an industrial canteen, hospital catering, or a large-scale banquet facility.&lt;/li&gt;&lt;li&gt;Must be proficient in both Veg and Non-Veg preparation.&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Education:&lt;/strong&gt; Minimum X Passed.
