Job Title: Demi Chef de Partie (North & South Indian Specialization)

Location: Bhopal, Madhya Pradesh

Job Summary

We are seeking a skilled Demi Chef de Partie specialized in both North and South Indian cuisines to join our industrial catering team. This role focuses on high-volume production (bulk cooking), ensuring the delivery of nutritious, flavorful, and authentic meals for a large workforce. The ideal candidate will have extensive experience in large-scale kitchen operations, maintaining strict hygiene standards while managing a designated section of the kitchen.

Key Responsibilities

  • Bulk Food Production: Prepare and oversee the production of authentic North Indian (Gravies, Tandoor, Sabzi) and South Indian (Idli/Dosa batters, Sambar, Rasam, Rice varieties) dishes for 400+ pax per shift.
  • Recipe Standardization: Follow and maintain standardized recipes to ensure consistency in taste, quality, and portion control across large batches.
  • Section Management: Lead a team of Commis chefs and kitchen helpers, ensuring all prep work (Mise-en-place) is completed ahead of service.
  • Quality Control: Conduct regular tastings and visual checks to ensure all food meets company standards before it leaves the kitchen.
  • Hygiene & Safety: Adhere strictly to HACCP, FSSAI, and industrial safety guidelines. Maintain a clean and organized workstation at all times.
  • Inventory Management: Assist the Head Chef in monitoring stock levels, minimizing food wastage, and ensuring proper storage of raw materials.

Technical Skills & Qualifications

  • Cuisine Expertise: Proficient in tempering techniques, spice blending, and traditional cooking methods for both North and South Indian regional menus.
  • Equipment Knowledge: Experience operating large-scale industrial equipment (e.g., steam kettles, tilting pans, commercial grinders, and high-pressure burners).
  • Experience: Minimum of 3-5 years of culinary experience, with at least 12 years in a similar capacity within an industrial canteen, hospital catering, or a large-scale banquet facility.
  • Must be proficient in both Veg and Non-Veg preparation.
  • Education: Minimum X Passed. Degree or Diploma in Hotel Management or Culinary Arts is preferred.

  • Ability to work under pressure in a fast-paced, high-volume environment.
  • Strong leadership and communication skills to manage junior staff.
  • Flexibility to work in shifts, including early mornings or late evenings.
